Erasmus = cooking for yourself in most of the cases and when you go to the supermarket, it is commonly found packaged meat no less than 400g. That's too much for 1 person at once. So sometimes you left some piece of meat in the fridge.
I want to show you one example for these cases: what to do with just 1 chicken breast
Lettuce salad with chicken and apple

Ingredients (for 1 person)
1 chicken breast
Lettuce
1 apple
4 or 5 walnuts
One little piece of cheese (whatever)
Olive oil
Salt
Vinegar
(optional) Balsamic vinegar and oil cream
Elaboration (10' approx)
Very simple:
Very simple:
- Wash and drain the lettuce. For draining I use a drainer like shown above. It removes the water by spinning the lettuce. It's very simple and effective.
- Cut the lettuce and add it to a bowl.
- Cut in pieces the chicken breast and fry them on a pan with olive oil.
- Meanwhile, peel and cut the apple. The same with the cheese (in dices or thin layers, your choice). Add to the bowl.
- Then add the chicken and some walnuts.
- Finally, it is the time for the salt, olive oil and vinegar. In my case I used some droplets of olive oil and then a cream of balsamic vinegar and olive oil. I strongly recommend it. It's very tasteful and colorful. Perfect for salads.
Hope you find useful this recipe. It's pefect for a dinner or to share with someone.
