Ingredientes (para 2 personas)
20/25 ml de arroz
Calamares congelados
Gambas congeladas
3 tomates maduros
¼ vaso nata líquida (o mantequilla) (opcional)
¼ cebolla
½ diente de ajo

1 taco de queso parmesano

Elaboración (90' aprox)
- Para elaborar el caldo que le dará gusto al risotto: meter en una cazuela las gambas y los calamares para que se descogelen. Cuando estén descongelados, retirar. Pelar las gambas. Añadir el resto de las gambas a la cazuela y poner a cocer con 3/4 L de agua durante 40'. Posteriormente, pasar todo por la batidora y colar.
- Para el sofrito, sofreír la cebolla y el ajo picadito. A continuación, añadir las colas de las gambas y los calamares troceados. Posteriormente, añadir los tomates y perejil (anteriormente triturados) y cocinar alrededor de 15 minutos.
- Y ahora es el momento del arroz! Añadir el vino blanco. Cuando se evapore, añadir el arroz y el taco de queso parmesano. Proceder de la siguiente forma para cocinar el arroz: echar un cazo de caldo y remover. Cuando el arroz se quede seco, echar otro cazo y remover. Así hasta que esté cocinado el arroz. De esta forma, el arroz pierde el almidón y da esa textura cremosa. Rectificar el sabor con sal (si es necesario).
- Una vez hecho el arroz retirar del fuego y si queréis un extra de cremosidad añadir un poco de nata líquida y remover.
- Servir

Risotto ai Frutti di Mare

¼ glass of cream (or butter) (optional)

1 big dice of parmesan cheese

Elaboration (90' approx)
- For the stock: fry the shrimps and squids a little bit to defrost them. When defrosted, put aside. Peel the shrimps and boil the rest of the shrimps in a big pot with 3/4 L of water over 40 min. Later, mix with a mixer and pass through a strainer.
- Fry the onion and garlic. Then, add the schrimps and squids (cut in pieces if you want). Later, add the tomatoes (crushed before with a mixer) and parsley. Cook over 15 minutes.
- Now is the time for cooking the rice! Add white wine. When evaporated, add the rice and parmesan cheese. To cook the rice, proceed as follows: pour 1 ladleful of the stock and stir. When rice consumes the stock, add again 1 ladleful and stir. Repeat until cooked. This "ladleful and stir" process makes the rice to release its starch and give the creamy texture. Add salt (if needed)
- Once the rice is cooked, stop heating. Add cream or butter to give extra creamy texture.
- Serve
